Structural, Procedural & Personnel Hygiene Audit
  A systematic independent examination of your food business will be conducted to determine whether food safety activities comply with legal requirements and guidance documents (I. S. 340-343). The audit report will be furnished with colour photographs highlighting both the good and poor practices observed by the auditor. The results of the audit will be used as a basis for delivery of food hygiene training and formulation of the HACCP plan.

Food safety training is an essential component of every food business in promoting a food safety culture. It is a legal requirement that people involved in a food environment are adequately trained commensurate with their work activity.

The Innovative Food Solutions training programme is based on the audit findings and therefore, will be designed to address the specific problems presented by your food business. The programme will consist of a Power Point presentation and will be followed by an examination.

The programme includes:
Characteristics of food borne illness
Sources of micro-organisms
Factors affecting bacterial growth
Food storage
Safe food preparations
Personal hygiene
Cleaning & disinfecting
Waste management
Introduction to HACCP
Audit findings
Note: During the session on Audit findings photographs taken during the audit will be displayed. Each trainee will be asked to assess the hazards observed. This is designed to promote greater awareness among trainees of where hazards can occur in their work environment, the type of hazards involved (e.g. physical, chemical or microbiological). how and where food poisoning can occur and most importantly how it can be prevented.
